Tasting of one Mature red wine :
- Could you please make a full organoleptic description of this wine and recommend a two course menu to go with it please ? You will have four minutes.
Food & Wine :
Could you please taste this dish and these two beverages? Please identify them, their style and origin - then select which one works best with the dish and explain why. You will have 5 minutes.
Spirits :
Could you please identify these three beverages, mentioning type, style and origin ? You will have 90 seconds.
Service :
Please serve us a bottle of white Sancerre from Daniel Chotard 2015 ! You have 5 minutes. -
Only one sommelier found the right bottle at the right temperature. Many have chosen the red Sancerre bottle from the same estate and some the white Sancerre from another vintage.
In fact three lots of these three bottles of wine were made available to the candidates. A batch at room temperature, a batch in a running service cellar and a lot in a non-plugged service cellar.
Commercial test :
You’ve been hired as the head sommelier of a hotel with several restaurants and bars. Your predecessor left us with 20 cases of this wine. We don’t know what to do with it !
You must have some ideas to make the best use of this wine, in a way that is both profitable and provides satisfaction for our guests !
